Chicken Ramen

Unfortunately I woke up sick, so what's a girl to do other than make some delicious chicken ramen and curl up on the couch?

Quick, easy, and super delicious.

Dice 2 slices of bacon. And fry.
As the bacon browns, add:
1 tbsp grated ginger
2 cloves crushed garlic
Brown

While that's cooking:

2c water
1 cube chicken stock
Bring to boil, add Raman noodles (I use the Costco brown rice and millet gf ones. They come in single serving squares and are super tasty if you're looking for a gf alternative)
Add 1 tsp soy sauce

Mix in bacon once noodles cooked.

Lightly fry an egg in bacon pan / grease (it will continue to cook once added to the soup)

Put your soups in a bowl, top with egg, diced tomatoes and basil and sriacha to taste.

Spicy Chicken Tortilla Soup


This soup can either be made in the slow cooker, or on the stove top. Serves 6-8


2 bell peppers, diced
Approximately 2 cups of tomatoes, diced
1 can tomato puree
(can substitute a large can of diced tomatoes for these two)
chilies, diced (I did three, but I like the heat!)
3 cloves garlic, diced
1 cup corn (fresh or frozen)
1 tbsp chili powder
1 tbsp pepper
1 tsp cumin
1 tsp salt
Optional - 1 small onion, diced
2 cups broth of your choice

Add all above ingredients to either the slow cooker and cook on low for the day, or add to a pot and bring to a simmer and let cook for at least an hour.


4 chicken breasts
olive oil
2 cloves garlic
1 tbsp chili powder
1 tbsp pepper
1 tsp cumin
1 tsp salt
1 jar your favourite salsa

Brown chicken and garlic in olive oil. Cover chicken with spices, continue to cook on stove top. Add salsa. Cover and bake for 1hr at 350 or until cooked. Pull chicken. Add to pot either when you get home from work, or after veggies have simmered for 1 hr.

2 cups beans (either canned or precooked). Add at same time as chicken.

Let cook in slow cooker for another two hours, or on the stove for another half an hour.
The longer you leave it on low, the more the flavours will enrich.

After dished up, top with a wedge of lime, a spoonful of sour cream, and fresh cilantro. Serve with corn chips.

As always, I encourage you to play with the recipe. Like it super spicy, add more chilies. Love corn, add more! Hate peppers, don't add any bell peppers. I put onion as optional, because I hate onions and have a mild allergy to them. But maybe you think they're awesome! Food should be fun, so have fun with it.

I did the slow cooker method this time around, as I work full time and just started grad school. I wanted dinner when I got home because I had an assignment to finish, and I made a big batch because I always need to bring a lunch. It turned out delicious, so I'm happy for the big batch!
